Premium baked goods thanks to precise control of the proofing process

You can precisely control the proofing of your dough pieces in our climate-controlled proofing room. The modular ceiling climate control system with integrated air ducting made of stainless steel prevents the dough pieces from being blown directly onto the ceiling. The particularly slowly circulating air ensures a constant room climate that moistens and tempers all dough pieces extremely evenly - regardless of which area of the room they are in.

 

You can conveniently regulate the temperature, humidity, proofing time and lighting using the controls on the front. You can also individually adjust the speed of the air flow. This is ensured by the speed-controlled fans. Our climate-controlled proofing chamber guarantees highly uniform proofing of all dough pieces - over several days. It therefore plays an important preliminary role in the production of your premium baked goods.

Powerful steaming

The high-performance steaming system ensures that your dough pieces always receive the optimum moisture and mature evenly. The humidity can also be finely adjusted - from 40 to 99 %.

Flexible heating,
high-quality insulation

The evaporator can be heated either electrically or with hot water - whichever is more advantageous for you. Automatically closing doors and the high-quality insulation of the cell body with PU cell elements make the air-conditioned proofing chamber highly energy-efficient.

Individual customization

Our air-conditioned proofing chamber is planned exactly to your requirements in 100 mm increments. Loading and unloading can also be carried out from two sides. This variant is particularly suitable for integrating the climate chamber into complex refrigeration systems.
