Compared to all other components of a modern bakery, relatively little attention has been given to date to the proving chamber. Conventional systems are working with a so-called stationary climate unit, usually installed at the end of the coldroom. The larger the room the larger the climate differences.

 

It doesn't have to be like this! DEBAG MONSUN climate proving chambers are equipped with a modular ceiling climate system with integrated air flow from chromium nickel steel.

 

 
  • Absolute uniform climate distribution, regardless of the size of the room.

  • The interior space can be fully utilised, without any equipment installations.

  • Easy to read displays allow for the permanent monitoring of the actual climate values.

  • Humidification takes place via an external humidifier which can be installed in a flexible manner; the carts can therefore remain in the coldroom during service work.

  • PU 75 mm insulation in coldroom quality ensures low energy consumption.

  • Planning and delivery adapted to the bakery situation.

  • Hardly any structural changes required (e.g. lowering the floor) since a special Thyssen vacuum bottom (only 23 mm high) is used
