The combination of deck and rack oven creates a variable baking system for baking different products on the stove top or rack according to its kind.
The baking system with stationary rack cart and moving baking atmosphere of the original MONSUN system guarantees extremely low flow velocities of the baking air since only a minimum distance of approx. 30 cm to the centre of the oven needs to be overcome.
MONSUN combination baking ovens do not dry out the baking goods. This produces moist rolls with long-lasting freshness. The steam generation directly at the heating register permits uniform moisturising and thus uniform browning and segmentation of the baked goods. The transfer of the steam of the baking air always guarantees the right temperature conditions in the oven.
A new heat-storing module now allows baking on stone slabs in the MONSUN SM. The classic SM oven can now be used in 3 different ways:
- with a stove module locked in place for baking on the deck,
- with rack cart or
- with stone slab module.
Furthermore, hardly any other baking oven offers such baking capacities (max. 1.050 pcs. of small baked wheat goods or 135 breads) and that with excellent MONSUN quality.
The special advantages of the MONSUN combination baking ovens:
SM: large deck baking area - 9 stoves 1.60 m deep stacked above each other with a space width of only 1.27 m
TWIN module: max. baking quantity on only 3.4 m² of space, room for 2 rack carts
Individual loading of the stoves with roll-off devices or complete with the "Multimat" loading system
